    Spinach and Ricotta “Meat”-balls

    Have you ever had a meal or bought something from the store and thought to yourself, “I should learn how to make that”.

    A few months ago, I was shopping and found a new frozen meal that became a fave – Spinach and ricotta “meatballs” with linguine. It was so tasty! And since it’s meatless, I was surprised and happy to know it was just as filling, with lots of flavor. So good, I knew I needed to find an easy recipe to make this on my own.

    It’s been a while since I tried a new recipe, so I went to the store, bought the ingredients, and gave it a go.

    DC Restaurant Week 2019

    Does your city / area host a Restaurant Week? It’s a great way to visit new places or try out popular restaurants for a cool price of $35 (3-course dinner) or $22 (lunch)! Found an article about the history. 

    Tuesday night, I met up with my friend (who just moved into the area), and walked over to The Wharf, the new, vibrant section in Southwest DC (only a few blocks away from the Waterfront metro station).  We didn’t have a set location to eat dinner and catch up, but we found out Officina was participating in DC Restaurant Week, so that’s where we ended up.

    According to its’ website, Officina is an Italian-inspired culinary collective.  I liked the ambiance. By the time we left, it was full of patrons, visiting over dinner and drinks.

    Since we didn’t have a reservation, we sat in the cafe / bar section, which was fine.

    Making Calzones

    Growing up, whenever my Dad made calzones, it was a real treat. It didn’t happen as often as having pizza for dinner. There was more of a process; creating individual mini pockets of warm bread, cheese, and sauce — probably 8-12 in one setting. Who really had time for all of that on a consistent basis? But it tasted so good.  Sometimes my sister Melissa would ask for them for birthday dinners.  Incredibly yummy.

    Every once in a while, when I have a taste for it, I’ll make a few calzones to eat for now and then save for rainy days. Yesterday, I had a 2-hour window between admin work and teaching my tap class, that I could make everything. So I got on it…

    Checking Out Modern Market

    Yesterday, I had an hour break between gigs at work. My brother and I drove up the street to Congressional Plaza. I got him a snack from Starbucks, but I knew I needed to get something to eat. To our right, we saw a sign for a place called Modern Market.  After seeing the tent and signs, it’s a new establishment in the shopping center.

    I’ve never heard of this place, but after perusing the menu on the window, I opted to pick something up. I’m doing a clean eating challenge and I’m making more of an effort to put in the right stuff! Read more

    Blueberry, blueberry

    Sweet breads are not my go-to food during breakfast/brunch time; more of an eggs and bacon kind of girl, with some potatoes or a biscuit on the side. But I love a blueberry muffin! I think it’s a sweet treat, but not as overpowering.  I don’t have them often, but when I do, I get extra happy. The ones from Costco? YUM. Read more
